Chicken Avocado Salad

A green salad with chicken is a classic “diet” meal because it’s low in calories but filling due to the protein and fiber. The addition of the avocado is this recipe adds some healthy fats as well.
Salads are so good for you, but can quickly be turned into a high-calorie guilt fest with the wrong dressing. I’m always recommending oil and vinegar dressings, but some people only have love for the creamy stuff. Enter yogurt-based dressing. These thick and creamy dressings give you the texture you’re looking for, without all the calories and fat. Making them at home is always an option, but now there are some premade bottled versions available. Bolthouse Farms and Hidden Valley are two of the big brands making them; the Bolthouse Farms options need to be refrigerated so they’ll be found in the produce section, while the Hidden Valley ones can be found in the regular salad dressing aisle.
This salad is easy enough to whip up after a busy work day. You could even cook the chicken ahead of time to make it something than can be thrown together in less than five minutes- now that’s what I call fast food!
Ingredients:
1 romaine heart or head of butter lettuce
1 large boneless skinless chicken breast, approximately 8 ounces precooked
1 Tbsp olive oil
½ avocado
½ cup sliced green onion
2 Tbsp chopped cilantro
4 Tbsp Bolthouse Farms Salsa Verde Avocado yogurt dressing
salt and pepper to taste
Directions:
1. Coat a preheated pan with the olive oil. Once hot, add chicken breast. Season with salt and pepper and cook until internal temperature reaches 165F.
2. Combine lettuce, avocado, green onion and cilantro and place cooked chicken on top, dividing into two separate portions.
3. Drizzle 2 Tbsp of dressing on each portion.
